Directions
  1. Bring desired fruit in 1.5 cups water with 2 Tbsp sugar to a boil over medium heat, then let simmer for 40-50 minutes.
  2. Remove from heat and strain in a fine-mesh strainer. Squish 'em with a spoon to get the juices flowin', and strain until the juice is nice and clear. (If you want jam or preserves, chop up the fruit a bit and add it in with the juice.)
  3. Combine fruit juice with 14 cup sugar and 1 tsp agar-agar powder, and whisk until well dissolved.
  4. Bring mixture to a boil for 2-3 minutes on medium-low, until it coats a spoon dipped into it. Don't over boil unless you like rubber jelly.
  5. Mix 12 tsp fruit extract in a pan, and continue to stir to keep the air bubbles out as the agar-agar begins to set.
  6. Pour into glasses and refrigerate until set.
